Simple Vanilla Cupcakes!



     250 gm butter
250 gm sugar
400 gm flour (self-raising)
6 small eggs
1tsp Vanilla essence
1 cup warm milk ( buttermilk)

Preheat oven at 350 Fahrenheit. Line cupcake tray with cupcake liners.
Sift the flour.

Beat the butter & sugar until nice and creamy ( I time myself to beat it at least 15 minutes) Add eggs one by one. Beat well after adding each egg. Fold flour mixture mixing it  well with the aid of buttermilk & add essence. Mix well, avoid over mixing. The batter should be of dropping consistency.Scoop the batter and drop into the cupcake liners, evenly ( I like to use an ice cream scoop).  Bake for 13-15 minutes.
This is my mum's recipe.Amazing cupcakes and if you don't want to use self raising flour you can use the cake flour, add tablespoon of baking powder for the cupcakes to rise.For more adventure add different flavors- cherry,strawberry,cardamom......
