Very Moist Chocolate Cake......

Beware!
This is a super moist cake....

2 cups sugar
1 3/4 cup cake flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
3 eggs
1 cup buttermilk
1/2 cup vegetable oil ( I like Canola oil)
1 teaspoon vanilla extract
1/2 cup hot water

Heat oven to 350 degrees F. Grease 8 inch round baking pan. Stir together sugar, flour,cocoa,baking powder & baking soda. Add eggs, milk,oil & vanilla; beat on medium speed for 2 minutes. Stir in hot water ( batter will be thin). Pour into the prepared tin, about 3/4 to 2/3 full.
Bake for 30-35 minutes or when a toothpick comes out clean when inserted. Loosen around the edge and let it cool in the pan for 10 minutes before removing on the cooling rack. Let it cool completely before frosting.


Chocolate Frosting

1 cup butter (softened)
500 gms icing sugar
2/3 cup Cocoa
1/3 cup milk
1 teaspoon vanilla

Beat butter till it is soft & creamy. Add icing sugar, milk, cocoa powder and vanilla. Mix well, not too much, 6-7 minutes is ok.
