Heart Warming Soups

With the weather up and down, soups are a good pick me up!
You can use homemade broth or store bought, but homemade soups are something different!

Tomato Soup

This soup was my childhood favorite and my mum's love made it more special!

6-8 tomatoes, chopped
2 stems celery, chopped
1 clove garlic, chopped finely
1 small onion, chopped
1 medium potato, chopped
1 small carrot, chopped
1 tbsp butter
salt to taste
1/2 tsp black pepper pd
A dash of basil
5 cups water

Combine all the above ingredients in a pot, cover and bring to boil, lower the heat to medium till the vegetables are soft. Switch off the heat, let it cool and then blend it. If the soup base is very thick you can add water to the consistency of your choice. Add a few drops of red food color to bring the color.


Cauliflower Soup

1 cup cauliflower cut in florets
1 potato, peeled and sliced
1 medium onion, sliced
1 tablespoon butter
3 cups vegetable broth

Melt the butter in a pot, saute onion in it for a minute, add the sliced potato and cauliflower. Saute for another minute and add the broth. Cover and bring it to boil. Lower the heat to medium and let it simmer till the vegetables are soft. Switch off the heat and let it cool. Blend it till smooth and return to cook on medium heat till it bubbles, check the seasoning and adjust accordingly. Serve hot with your favorite bread or bun.

You can use the same recipe for Onion Soup, Broccoli Soup and Potato and Leek Soup, simply replace the cauliflower with the respective vegetable you want to use.

For carrot soup replace the cauliflower with diced carrots and add 1/2 teaspoon nutmeg powder to give that extra zing!
