4 chicken legs, cut into two pieces, skin off
1 teaspoon salt
1/2 teaspoon black pepper powder
Juice from 1 lemon
Rind of 1 lemon
4 teaspoons zaa'tar (Middle Eastern spice blend of herbs)
4-5 tablespoon olive oil
1 teaspoon crushed garlic
1 teaspoon red chili flakes
Clean the chicken pieces and cut into two pieces, make slits into the chicken flesh.
Rub the salt well on the pieces.
In a bowl add the lemon rind, lemon juice, black pepper powder, zaa'tar, garlic, red chili flakes and olive oil, mix well and rub well onto the chicken. Keep the marinade overnight or 6-8 hours in the fridge.
When ready to cook, preheat the oven at 400 degrees Fahrenheit ,arrange the chicken pieces in an ovenproof dish, drizzle some olive oil and bake in medium heat oven for about an hour, check for doneness, you can continue cooking for 15 minutes if you feel it is not ready.
